If you have a glut of gherkins (or cucumbers, these work just as well) one of our favourite preserves is a gherkin relish.

I also added those pickled mustard seeds that usually sit right at the bottom of the jar, which turned out to be a great idea. So he spread some sweet pickle relish recipe on grilled toast, then topped it off with a fried egg and some chili sauce. A version of this recipe is often used for beans and cauliflower as well to produce what's known as piccalilli or chow chow.
